(Los Angeles) – When preparing for Thanksgiving dinner, most think about how to get creative with sides and how to best to cook the star of the show—the iconic Thanksgiving turkey. This year, think about a different fowl, the duck. Ducks offer an altogether different taste than turkeys, particularly Peking roast ducks. Each year people from Los Angeles and those living outside the city drive for miles into historic Los Angeles Chinatown to grab these flavorful birds for their holiday meals.
Originating from Beijing, the Peking roast duck has been prepared since the imperial era and is now considered one of China’s national foods. Now this age-old dish has a new tradition: Chinese families are serving it during the most American of holidays—Thanksgiving. Peking Duck is noted for its thick and crispy skin as well as flavorful dark meat. The ducks are seasoned before hand and slowly roasted in a closed or hung oven. The meat comes out crispy yet delightfully tender and moist on the outside.
Chinatown restaurants and merchants are also offering Chinese-style roasted turkeys, which are carefully steeped in a soy sauce marinade spiked with star anise, two different kinds of vinegar and sweet syrup. The turkey is then roasted, giving way to a crispy on the outside, moist on the inside, sweet and savory turkey. Prepared similarly to traditional Peking roasted duck, the turkeys have a crispy, seared skin and better-preserved juices than oven-roasted turkeys.
Serve Peking roast duck and Chinese-style roasted turkey with complementary sides such as sticky rice stuffing, or eat Peking duck with rice bao (pancake), spring onions and hoisin sauce—which are available at most Chinatown merchants and restaurants.
Since these ducks and turkeys are very popular around this time of year, Chinatown merchants suggest placing orders at least one week ahead of time to ensure that the size requested is available.
